Forks Over Knives

People are suffering all around us. And they don't need to be. That's the message of two pioneering researchers, Dr. T. Colin Campbell and Dr. Caldwell Esselstyn, remarkable individuals who both have uncovered powerful evidence that many of our most serious health problems, such as heart disease, type 2 diabetes and some forms of cancer, can be prevented—or even reversed—simply by changing the way we eat. They aren't alone. Many other scientists and doctors have come to the same conclusion—that switching from a menu centered on processed and animal-based foods like meat and dairy to a whole foods plant-based diet is the key to solving the health crisis that besieges America.

Sound too simple to be true? In Forks Over knives we put the question to the test. It was an amazing journey—one that took us all over the United States, to Canada and China. Among our biggest thrills was interviewing the leading diet and health experts in the world including Dr. Campbell, Dr. Esselstyn, Dr. John McDougall, Dr. Neil Barnard, and many others. We filmed heart disease patients of Dr. Esselstyn's who are thriving today, over 20 years after being essentially given up for dead by their cardiologists.

We also demonstrated the benefits of whole plant-based foods first hand. After getting some disturbing checkup results, [Director] Lee [Fulkerson] switched to a plant-based diet for a 12-week test period. His cholesterol level plummeted nearly 100 points, significantly reducing his chances of getting a heart attack—without using any medications. We saw even more remarkable results with our other “test patients”—Joey Aucoin and SanDera Nation. Both were suffering from multiple life-threatening conditions, including type 2 diabetes and hypertension. Joey was taking no less than nine pills and two injections per day. Yet they reversed their diseases, just by adopting a whole-foods plant-based diet.

The experience changed our lives. Before starting Forks Over Knives, Lee's diet consisted mainly of Coca-Cola, Red Bull (by the case!), and fast-food cheeseburgers. Now, he has no intention of ever eating that way again. Brian, who’s been living on a plant-based diet for years, became more inspired than ever to spread this message as widely as possible. Our shared hope is that everyone who sees this film will have their eyes opened as ours were, to the extraordinary healing powers that exist right in front of them…at the end of their forks.
